Carrot Zucchini Muffins


Yes, we have been baking again. Actually we bake pretty often in our home, mostly because both Reece and enjoy it and when I make it at home I know exactly what’s in it.
We usually bake up banana muffins, but last week I told Reece we would bake them and then noticed we didn’t have enough bananas..oops. As any mama knows there was no going back, I had to go ahead with the baking with a quick change in plans. I opened the fridge and before me was a zucchini and a bag of carrots, so into the muffins they went.
This recipe is adapted from the banana muffin recipe. It was my first go with the changes and they turned out great. Reece loves them and so do I. You can find the exact recipe here.

  7. I love muffins and how adaptable they are! And they are always a hit with the kids (and adults!). Love Reece's cars :-) And I love how they concentrate as they measure their ingredients :-)

    1. I love them because they are so easy to grab from the freezer when we are running out the door and I need snacks to fill our snack bag :) And we both love them.

  8. I love how Reece is helping in the kitchen! Keep cultivating that love even if it means a messy kitchen. (I wish I had done more when my kids were littler) He looks like he really enjoyed the process - did he like the end product? The muffins look very good. Thanks for the recipe. I will have to try these - I'm assuming I could make this into a bread loaf or two instead of muffins?

    I was going to ask what was he getting from the container (kept in the freezer?) - maybe the dates?

    1. He loves being in the kitchen Ellen. He has been in there from the start and has never looked backed. He comes running when he hears me starting a meal.

      He loved the muffins, but loved them even more the second time we made them - we added some chocolate chips :)

      That was flaxseeds, he was grinding them. They act as an egg replacer.
