Yes, we have been baking again. Actually we bake pretty often in our home, mostly because both Reece and enjoy it and when I make it at home I know exactly what’s in it.
We usually bake up banana muffins, but last week I told Reece we would bake them and then noticed we didn’t have enough bananas..oops. As any mama knows there was no going back, I had to go ahead with the baking with a quick change in plans. I opened the fridge and before me was a zucchini and a bag of carrots, so into the muffins they went.
This recipe is adapted from the banana muffin recipe. It was my first go with the changes and they turned out great. Reece loves them and so do I. You can find the exact recipe here.

Theses look really yummy. We need some more muffins today for snacks, thanks for sharing!
ReplyDeleteLol, we often have cars joining us, as well as bunnies and tigers, oh my!
Oh, you should see it when his "friends" join us, there isn't much counter space left :)
DeleteHope you enjoy the muffins.
They look quite yummy...and filling.
ReplyDeleteThey are so yummy!!! Wish I could share :)
DeleteHa, I made pineapple carrot muffins from the pulp this morning for breakfast after I juiced!
ReplyDeleteYour muffins look quite tasty!
Now that sounds delish Tracey. I might have to try that :)
Deletethese look delicious! can't wait to try them out!!!!
ReplyDeleteLet me know what you think, hope your little man likes them :)
DeleteA lovely activity to do together. xxoo
ReplyDeleteIt is, I really love having Reece in the kitchen with me. He comes running when he hears me start a meal, he loves to help.
DeleteThese look yummy - we love to bake here too. So much fun to do together. I'm going to have to try these muffins soon.
ReplyDeleteIt's funny because I don't remember what baking was like before Reece. It is just so much fun together that is all I remember now.
DeleteHope you like them.
I love muffins and how adaptable they are! And they are always a hit with the kids (and adults!). Love Reece's cars :-) And I love how they concentrate as they measure their ingredients :-)
ReplyDeleteThanks for sharing on Happy lil ❤'s are baking
P.s. I have your book on my wish list, looks great!
I love them because they are so easy to grab from the freezer when we are running out the door and I need snacks to fill our snack bag :) And we both love them.
DeleteThose cars do everything with us :)
Awe, that is great to hear, thanks.
I love how Reece is helping in the kitchen! Keep cultivating that love even if it means a messy kitchen. (I wish I had done more when my kids were littler) He looks like he really enjoyed the process - did he like the end product? The muffins look very good. Thanks for the recipe. I will have to try these - I'm assuming I could make this into a bread loaf or two instead of muffins?
ReplyDeleteI was going to ask what was he getting from the container (kept in the freezer?) - maybe the dates?
He loves being in the kitchen Ellen. He has been in there from the start and has never looked backed. He comes running when he hears me starting a meal.
DeleteHe loved the muffins, but loved them even more the second time we made them - we added some chocolate chips :)
That was flaxseeds, he was grinding them. They act as an egg replacer.
